Why did you get into the restaurant business:
“While in high school, I had the opportunity to work for good local people (like Hans at the Canterbury Brook Inn), who enlightened me. That led me to attend the Culinary Institute of America. And after graduation, I worked in New York City.”
How did you get your start:
“Working in the Thomas Keller Restaurants in New York City, I learned what a good restaurant culture is and how a restaurant and kitchen should operate.”
The experience prepared him for opening his own establishment.
Do you own any other restaurants:
“I own the Newburgh Flour Shop. It’s a full service bakery (cakes and breads) that’s a half block from here.” The address is 109 Liberty Street.
How did the restaurant get its name:
“I was reading a book, Setting the Table by Danny Meyer. He said ‘call it what it is.’ It’s a bistro on Liberty Street. No one has to ask where we’re located.”
What type of food do you serve:
“It’s rooted in traditional French cuisine, with our own take based on our background. The menu is influenced by Irish, Italian, American, and Jordanian employees in the kitchen. The latter person plays an important role.”
In 2017, the Liberty Street Bistro was named the Best New Restaurant in the Hudson Valley. It’s constantly ranked among the best day-night dining places in the area. And Mr. Kelly had the honor of being invited to cook at the James Beard House in New York City.
What is your signature:
“We change our menu so frequently, it’s hard to say. I guess our signature is inventive cuisine in a refined environment.”
Why should visitors stop at your restaurant:
“For a meal served with local food and seasonality.”
